🗨 **Marcin**: Śledzie w śmietanie z cebulą i jabłkiem były u mnie w rodzinie daniem wyłącznie wigilijnym, czymś, na co czeka się cały rok. Dla mnie jako dziecka ważniejsza była inna wigilijna potrawa – kluski z makiem i bakaliami, śledzie w śmietanie polubiłem dużo później, zarówno ich smak, jak i znaczenie jako dania rodzinnego i świątecznego. W latach 2000 mój ojciec postanowił wyjść poza tradycję i zaczął robić śledzie za każdym razem, kiedy przyjeżdżałem do domu rodzinnego w Słupsku. 

Ja sam nauczyłem się je robić, najpierw w wersji tradycyjnej, a potem w wersji bardziej wegetariańskiej, zamieniając mleko na mleko roślinne i stosując roślinny zamiennik śmietany. Przygotowuję je rzadko, głównie na kolejne wigilie w Londynie, wracając w sumie do pierwotnej tradycji domowej. 

Zrobiłem je też dwóm znajomym z Ukrainy, które przyjęliśmy pod dach w Słupsku po inwazji rosyjskiej, jako element powitania w Polsce, ale też jako symboliczny klucz do ich nowego domu.

===== 🇵🇱 Składniki =====

Śledzie Matjas można kupić w niektórych sklepach rybnych, w polskich sklepach lub na polskich stoiskach w supermarketach.

  * 10 płatów śledziowych Matjas
  * 3 średnie cebule
  * 3 kwaśne jabłka
  * opakowanie gęstej śmietany (lub śmietany owsianej)
  * pieprz czarny
  * mleko krowie (lub mleko owsiane)






===== 🇵🇱 Przygotowanie =====

Płaty śledziowe wypłukać i wymoczyć przez kilka godzin (najlepiej przez noc) w mleku (lub w mleku owsianym), a następnie lekko je opłukać w zimnej wodzie i pokroić każdy na 8 części. Obraną cebulę pokroić w cienkie piórka, a obrane jabłka zetrzeć na tarce – w zależności od upodobań można je zetrzeć drobno lub grubiej. Śledzie, jabłka i cebulę zmieszać w misce, a następnie dodać śmietanę. Sosu powinno być sporo, ale nie powinien dominować potrawy. Dodać sporo pieprzu do smaku i zostawić na kilka-kilkanaście godzin w lodówce. 

Śledzie w śmietanie najlepiej podać ze świeżo ugotowanymi ziemniakami, polanymi roztopionym masłem i posypanymi siekaną pietruszką.

🗨 **Marcin**: Herring in Cream with Onion and Apple was, in my family, exclusively a Christmas Eve dish—something we waited for all year long. As a child, I was far more excited about another traditional dish: noodles with poppy seeds and dried fruit. I only came to appreciate herring in cream much later, both for its taste and for its significance as a family and holiday dish. In the 2000s, my father decided to step beyond tradition and started making herring every time I visited my family home in Słupsk.

I learned to prepare it myself—first in the traditional way and later in a more vegetarian-friendly version, substituting dairy milk with plant-based alternatives and using a non-dairy sour cream substitute. I rarely make it, mainly for Christmas Eve dinners in London, which in a way brings me back to my family’s original tradition. 

I also prepared it for two Ukrainian friends whom we took into our home in Słupsk after the Russian invasion. It was both a welcoming gesture and a symbolic key to their new home in Poland.

===== 🇬🇧 Ingredients =====

Matjas herring fillets can be found in some fish shops, Polish grocery stores, or at Polish sections in supermarkets.

  * 10 Matjas herring fillets
  * 3 medium onions
  * 3 tart apples
  * 1 container of thick sour cream (or oat cream)
  * Black pepper
  * Cow’s milk (or oat milk)


===== 🇬🇧 Preparation =====

Rinse the herring fillets, then soak them for several hours (ideally overnight) in milk (or oat milk). Afterwards, lightly rinse them in cold water and cut each fillet into 8 pieces. Slice the peeled onions into thin wedges, and peel and grate the apples – you can grate them finely or more coarsely, depending on your preference. In a bowl, mix the herring, apples, and onions. Then add the cream, making sure there’s plenty of sauce, but not so much that it overwhelms the dish. Season generously with black pepper to taste and let it sit in the fridge for a few to several hours.

Herring in cream is best served with freshly boiled potatoes topped with melted butter and sprinkled with chopped parsley.
