Dawniej spożywanie na przednówku młodej pokrzywy (zwanej również lebiodą) było dość powszechne z konieczności, z ubóstwa. Dziś „wracamy” do przepisów czy wiedzy kulinarnej babek i prababek z ciekawości raczej niż konieczności.

Zupa pokrzywowa to nic innego jak zupa krem z kartofli „zaprawionych” pokrzywą, która nadaje zupie delikatny smak i intensywnie zielony kolor. Pokrzywę najlepiej zbierać wiosną, w kwietniu i wczesnie w maju na łąkach i w lasach.







===== 🇵🇱 Składniki =====

  * Mały koszyczek młodych delikatnych liści pokrzywy zrywamy z samego szczytu pokrzywy. Zapewniam, że młodziutka pokrzywa nie parzy ale rękawiczki można nałożyć
  * 4 kartofle
  * 1 cebula
  * 2 ząbki 
  * listek laurowy, majeranek, gałka muszkatułowa
  * masło 
  * kostka bulionowa
  * woda 3 szklanki - ok. 750 ml






===== 🇵🇱 Przygotowanie =====

W garnku roztapiamy masło i podsmażamy na złoto cebulę i czosnek. Dodajemy pokrojone w kostkę kartofle. Nie muszą być artystycznie krojone i tak całość będzie zmiksowana. Całość lekko podsmażamy na złoto, dodajemy sól, pieprz i zioła i zalewamy wodą (z rozpuszczona w niej kostką bulionową). Gotujemy przez okło 20 minut, i kiedy kartofle będą już miękkie, dodajemy liście pokrzywy tylko na chwilę żeby się tylko zblanszowały. Odstawiamy i po przestygnięciu najlepiej wyjąć listek laurowy, a potem całość miksujemy na zupę krem. Dla efektu już na talerzu można dorzucić parę świeżych listków pokrzywy, dorzucić kleks śmietany i posypać utartą gałką muszkatułową. Albo dorzucić parę ziarnek jałowca. Fantazja artystyczna kucharza mile widziana.

In the past, eating young nettles or orache (lamb’s quarters) in early spring was commonplace out of necessity, due to poverty. Today, we revisit the recipes and culinary knowledge of our grandmothers and great-grandmothers more out of curiosity than need.

Nettle soup is essentially a potato cream soup “enriched” with nettles, giving it a delicate yet intensely green color.

In spring, around April or early May, we head out to the woods or meadows to pick nettles((Elżbieta runs the [[https://www.facebook.com/profile.php?id=100066581469938|Zapiecek]] fan page, where you can find not only recipes but also tips on where and how to spot a herd of bison (about 150 of them, no less!) or how to find a theater or festival in… the forest.)).

===== 🇬🇧 Ingredients =====

A small basket of tender young nettle leaves picked from the very top of the nettle. I assure you that very young nettles don’t sting, but you can wear gloves if you prefer.

  * 4 potatoes
  * 1 onion
  * 2 cloves of garlic
  * 1 bay leaf, marjoram, nutmeg
  * Butter
  * 1 bouillon cube

===== 🇬🇧 Preparation =====

Melt some butter in a pot, then sauté the onion and garlic until golden. Add the potatoes cut into cubes (they don’t have to be perfectly cut since everything will be blended later).

Lightly brown everything and then pour in the broth. Add salt, pepper, and herbs.

When the potatoes are soft, add the nettle leaves just long enough to blanch them. Remove the pot from the heat, let it cool a bit, and then blend it all into a creamy soup (remember to take out the bay leaf first). For a nice presentation, you can add a few fresh nettle leaves on top, a dollop of sour cream, and a sprinkle of grated nutmeg—or even toss in a few juniper berries. A little artistic flair is always welcome.
