🗨 **Jola**: Ten przepis mój tata znalazł w „Dzienniku Polskim” – gazecie wydawanej codziennie w Londynie (nazywanej też „Dziennikiem Żołnierza”). Przepis na zająca szybko stał się jednym z jego ulubionych, bo mięso jest marynowane – a on uwielbiał wyrazisty smak dziczyzny. Na odwrocie wycinka widać rok 1984, co jest zabawne, bo nam w rodzinie wydaje się, że to dość „nowoczesny” przepis, a minęło od tamtej pory ponad 40 lat!

Dla Taty ten przepis był szczególnie cenny, bo był ulepszeniem w porównaniu z tym, który stosowaliśmy wcześniej. Poza tym wiązał się z jego wspomnieniami i próbami przywołania smaku wolności – zbierania, polowania, łowienia „dzikiej” żywności – oraz z barwnymi wspomnieniami z życia w małym miasteczku i na wsi. Zupełnie inny świat niż ograniczenia, z jakimi zmagał się w Londynie.

Opowieści o Polsce zawsze przepełnione były nostalgią i tęsknotą. Bardzo brakowało mu domowej kuchni jego mamy, a ona była świetną kucharką. A gdy wracam do tego przepisu, podoba mi się ten język: „ponglais” wplecione w eleganckie, polskie opisy. Ten przepis jest tradycyjnie bożonarodzeniowy, ale ilekroć udawało nam się kupić zająca, czułam się, jakby już były święta!





===== 🇵🇱 Składniki =====

**Zając**
  * comber i udźce z zająca
  * 4 uncje (ok 120 g) słoniny – okrojonej z surowego kawałka boczku i ważonej po odkrojeniu, pokrojonej w paseczki
  * małe opakowanie kwaśnej śmietany
  * 2 łyżki mąki pszennej
  * mielony czarny pieprz i mielone jagody jałowca oraz sól
  * 1 łyżka oleju do smażenia

**Marynata**
  * 250 ml octu
  * 500 ml wody
  * 1 mała cebula pokrojona w plastry
  * 1 liść laurowy
  * po ok. 5 ziaren ziela angielskiego, pieprzu i jagód jałowca





===== 🇵🇱 Przygotowanie =====

Wymieszaj wszystkie składniki marynaty i zalej nimi mięso w jakimś naczyniu tak, aby było całkowicie zanurzone. Przykryj i trzymaj w chłodnym miejscu przez 2–3 dni, codziennie przewracając mięso.

Mój tata mówił, że w Polsce babcia przygotowywała to zimowe danie, wieszając je na zewnątrz, w worku, za oknem na piętrze (tak wysoko, żeby nie zwabić wilka z lasu). Pamiętam moją pierwszą podróż do Krakowa w grudniu 1980 – panowały wtedy braki żywności, w sklepach prawie nic nie było oprócz octu i serka topionego. Idąc ulicą mijało się niewielkie bloki, a za oknami wisiały plastikowe torby. Z siostrą śmiałyśmy się, wspominając tatę i jego przygody z przyrządzaniem zająca.

  * cienkie paseczki (wycięte z) surowego boczku
  * mieszanka mielonego czarnego pieprzu, mielonych jagód jałowca i soli
  * olej do smażenia





===== 🇵🇱 Dalszy sposób przygotowania =====

Zalewa (solanka lub marynata) zmiękcza mięso i wzmacnia smak dziczyzny. Po 2–3 dniach wyjmij mięso, opłucz je w zimnej wodzie, oczyść z ewentualnego osadu (wygląda to niezbyt przyjemnie, ale wystarczy po prostu umyć mięso i wytrzeć papierowym ręcznikiem).

Ostrym nożem zrób niewielkie nacięcia w mięsie i wsuń w nie paski słoniny. Następnie obficie natrzyj mięso mielonym pieprzem, jałowcem i solą. Rozgrzej piekarnik do temperatury ok. 190°C. W tym czasie w dużej patelni rozgrzej olej tak, aby skwierczał, i obsmaż kawałki mięsa na złoto.

🗨 **Jola**: This recipe was saved by my dad from a Dziennik Polski the Daily Polish newspaper, a ‘paper that was published daily in London ( also called the Soldiers’ Daily) This recipe for hare soon became one of his favourites because the meat is marinaded - and he loved the gameyness. On the back of this recipe cutting I can see it’s from 1984 and it’s funny because it feels like it is a very modern recipe in our family but actually it’s now just over 40 years old! 

This recipe was dear to my Tata as it was an improvement on the one that we had had up until this one. Plus, it is tied in with his memories of and his attempts to recapture the taste of life of freedom, foraging, shooting, fishing “wild” food and his vivid snapshot memories of life in a very small country town and village life. Not like the restrictions of his London life. 

Stories of Poland were always recounted to us with a sad longing. He missed his mum’s cooking that was for sure, she was a skilled cook. And re-reading this I love the writing in this recipe – ponglais littering the elegantly expressed Polish instructions and descriptions.  This is a recipe for Christmas but whenever we could buy a hare it felt like Christmas!





===== 🇬🇧 Ingredients =====

**A hare**

  * The saddle and legs of a hare.
  * 4 oz. slonina – cut off the meat from of a uncooked bacon joint and the lard that is left, weigh and cut into strips
  * A small carton of sour cream
  * 2 tbsp plain flour 
  * Gound black pepper and ground juniper berries and some salt
  * 1 tbsp cooking oil

**Marinade**

  * 250 ml vinegar
  * 500 ml water
  * 1 small onion sliced
  * 1 bay leaf
  * 5 or so grains each of allspice, peppercorns and juniper berries

Mix all together and pour into a container covering the meat. Keep it covered in a cool place for 2-3 days turning it daily.


My dad would say that in Poland my babcia would prepare this stage of the winter dish by hanging outdoors, in a bag, out of an upstairs window (high up so as not to tempt a hungry wolf out of the woods). I remember my first trip to Krakow Poland in December 1980, there were food shortages everywhere, nothing in the shops but white vinegar and processed cheese. As you walked down the street past small blocks of flats there were plastic bags hanging out of the window up above. My sister and I would chuckle and think of our Tata and his hare cooking adventures.

  * Thin strips, lardon of fat – from a raw bacon joint
  * Make a mix of Ground black pepper and ground juniper berries and some salt
  * Cooking oil





===== 🇬🇧 Next step method =====

The brine or picking liquid tenderises the meat and brings out the game flavour. After 2-3 days remove the meat, wash it and clean off any goo - it sound a bit gross but be brave, just wash the meat, clean it pour away the pickling liquid and pat the meat dry with a paper kitchen towel.

With the tip of a knife make small holes all over the meat and spike it with thin bacon lard strips. Generously cover the meat with ground pepper and ground juniper berries and salt.
We heat up an oven, to 190 degrees. Meanwhile, heat up the oil in a large frying pan until sizzling and brown the pieces of meat. In a casserole arrange lardon strips and lay the meat pieces on top. Add some water, about in a quarter way up the dish, cover and roast in the oven. Roast the meat in a hot oven until tender, topping up the water so it doesn’t dry out.

When it’s tender mix the small pot of sour cream with 2 tbsp plain flour add some water if the cream is very thick and pour the mix over the meat. With the lid open cook until golden.

Serve with potato puree and finely grated cooked beetroot – we like this served hot. Grate raw and then gently cooked in a frying pan with a knob of butter. Or serve with cwikla: cooked beetroot, grated and mixed with horseradish and you can buy it in a jar.
