🗨 **Justyna**: Taki Rosół z kurczaka robiła moja babcia w pięknej lubelskiej wsi Gęś, a potem moja mama, która przywiozła ten przepis jak przyjechala studiowac do Warszawy, a teraz ja, z Warszawy zabrałam go do Londynu i dzielę sie tym przepisem na najlepszą polską zupę.

===== 🇵🇱 Składniki =====

  * 1 kurczak około 1.5 kg
  * 2 duże marchewki – ok.500 g
  * 1 korzeń pietruszki – ok. 100 g
  * 1 cebula – ok. 120 g
  * Biala cześć pora – ok 100 g
  * 1/2 korzenia selera – ok 150 g
  * 4 ząbki czosnku
  * 2 litry wody
  * 10 łodyżek natki pietruszki
  * 3 listki laurowe, 5 ziaren ziela angielskiego
  * łyżeczka pieprzu, łyżeczka soli






===== 🇵🇱 Przygotowanie =====

Najpierw całego kurczaka zostawiamy w garnku z zimną wodą na 2 godziny. Potem mozna usunać kuper oraz nadmiar tłuszczu z dołu podbrzusza jezeli chce sie otrzymac mniej tłusty rosół.

Warzywa obieramy i dzielimy na pół. Bierzemy duży garnek, w którym zagotuj 2.5 litra wody. Kurczaka wkładamy do wrzątku i dalej gotujemy przez kilka minut, następnie wodę wylewamy. Do garnka wkladamy obrane warzywa i wsypujemy przyprawy. Cebulę przekrój na pół i podpsmarz na suchej patelni przez 5 minut i dodaj do garnka. Wszystko zalewamy 2 litrami filtrowanej wody. Jak rosół się zagotuje, zmniejsz moc palnika i pozostaw na malym ogniu przez 1.5 godziny.

Rosół podawaj z goracym drobnym makaronem.

🗨 **Justyna**: This is how my grandmother made chicken broth in the charming village of Gęś near Lublin. Later, my mother brought this recipe with her when she came to Warsaw for her studies. Now I’ve taken it from Warsaw all the way to London, and I’m sharing it as the best Polish soup around.

===== 🇬🇧 Ingredients =====

  * 1 chicken (about 1.5 kg)
  * 2 large carrots (approx. 500 g)
  * 1 parsley root (approx. 100 g)
  * 1 onion (approx. 120 g)
  * White part of a leek (approx. 100 g)
  * 1/2 celery root (approx. 150 g)
  * 4 cloves of garlic
  * 2 liters of water
  * 10 sprigs of parsley
  * 3 bay leaves, 5 allspice berries
  * 1 teaspoon of pepper, 1 teaspoon of salt






===== 🇬🇧 Preparation =====

First, place the whole chicken in a pot with cold water and let it soak for about 2 hours. If you prefer a less fatty broth, you can remove the tail and any excess fat from the lower part of the chicken.

Peel the vegetables and cut them in half. Bring about 2.5 liters of water to a boil in a large pot. Add the chicken and let it cook for a few minutes, then discard this water. Return the chicken to the pot along with the peeled vegetables and spices. Cut the onion in half, toast it on a dry pan for about 5 minutes, and then add it to the pot. Cover everything with 2 liters of filtered water.

Once the broth comes to a boil, reduce the heat to low and simmer for about 1.5 hours.

Serve the broth hot with fine noodles.
