 +🗨 **Justyna**: This is how my grandmother made chicken broth in the charming village of Gęś near Lublin. Later, my mother brought this recipe with her when she came to Warsaw for her studies. Now I’ve taken it from Warsaw all the way to London, and I’m sharing it as the best Polish soup around.

 +  * 1 chicken (about 1.5 kg)
 +  * 2 large carrots (approx. 500 g)
 +  * 1 parsley root (approx. 100 g)
 +  * 1 onion (approx. 120 g)
 +  * White part of a leek (approx. 100 g)
 +  * 1/2 celery root (approx. 150 g)

 +First, place the whole chicken in a pot with cold water and let it soak for about 2 hours. If you prefer a less fatty broth, you can remove the tail and any excess fat from the lower part of the chicken.

 +Peel the vegetables and cut them in half. Bring about 2.5 liters of water to a boil in a large pot. Add the chicken and let it cook for a few minutes, then discard this water. Return the chicken to the pot along with the peeled vegetables and spices. Cut the onion in half, toast it on a dry pan for about 5 minutes, and then add it to the pot. Cover everything with 2 liters of filtered water.
