====== Pierogi z kapustą i grzybami spod Strzechy ======

🗨 **Justyna**: To są tradycyjnie pierogi, które są podawane w prawie każdym polskim domu na wigilię, ale też goszczą na wielu polskich stołach przez cały rok. Moja mama opowiadała, że w jej domu rodzinnym były podawane przynajmniej raz w tygodniu. To ulubione polskie danie mojej córki Łucji.





===== 🇵🇱 Składniki =====

**Ciasto pierogowe**

  * około 480 g mąki pszennej
  * 1 szklanka gorącej wody
  * 2 łyżki masła
  * łyżeczka soli

**Składniki na farsz z kapusty i grzybów**

  * 500 g kapusty kiszonej
  * 40 g suszonych grzybów
  * 1 duża cebula
  * 5 łyżek oleju
  * płaska łyżeczka pieprzu
  * płaska łyżeczka cukru
  * 3 liście laurowe
  * 4 ziarna ziela angielskiego







===== 🇵🇱 Przygotowanie =====

Przygotowania najlepiej zacząć dzień wcześniej. 

Do miseczki z zimną wodą włóż 40 gramów suszonych grzybów, najlepiej prawdziwków lub/i podgrzybków. Miseczkę odstaw na 10 godzin. Wyjmij grzyby i pokrój bardzo drobno. Następnie obierz i drobno poszatkuj cebulę. Na nagrzaną patelnię wlej olej. Dodaj poszatkowaną cebulę i smaż przez około 15 minut. Potem dodaj posiekane grzyby i całość smaż jeszcze przez parę minut ciągle mieszając. 

Następnie przepłucz kapustę w zimnej wodzie i dobrze odciśnij. Odciśniętą kapustę kiszoną posiekaj nożem i umieść w dużym garnku. Dodaj cebulę i grzyby. Wlej wodę z moczenia grzybów, wsyp pieprz i cukier oraz liście laurowe i ziele angielskie i gotuj przez godzinę od czasu do czasu mieszając. 

Gdy kapusta powoli się gotuje możesz przygotować ciasto. Do dużej misy wsyp około 500 gramów mąki, gorącą wodę. Dodaj masło i sól. Wyrabiaj w robocie a potem  dłońmi. Wyrobione przez 15 min ciasto zawiń w folię i odłóż na 30 minut. 

W tym czasie kapusta powinna się już powoli kończyć gotować. Zostaw ją by ostygła. Ciasto po 30 min należy podzielić na pół i następnie rozwałkować na cienki płaski placek. Z ciasta następnie wykrajać szklanką koła i do każdego koła wkładać łyżeczkę farszu z kapusty i grzybów, tak by brzegi koła pozostały puste na 1 cm, następnie koło złożyć na pół i sklejać ciast palcami ściskając obie części ciasta razem. W ten sposób tworzy się półkole ze sklejonymi pierogami. Pierogi układamy na lnianych lub bawełnianych ściereczkach. 

Gdy już wszystkie pierogi wykroimy z ciasta i zlepimy, do dużego garnka wlewamy wrzątek i dodajemy 2 łyżki oleju a następnie wrzucamy pierogi po 20 sztuk na raz i gotujemy przez ok 8 min. Wyławiamy pierogi i układamy do misy lub na talerz, i w tej samej wodzie gotujemy kolejną porcję. Pierogi powinny być podawane gorące. Można podawać je z masłem lub polać odrobiną gorącego oleju z drobno pokrojoną  podsmażoną cebulą.

Pierogi które zostały można wsadzić do plastikowych pojemników. Układać luźno obok siebie i polać każdy odrobinką oleju aby się nie skleiły. Następnie wszystko przykryć i wstawić do zamrażalnika.

🗨 **Justyna**: These are the traditional pierogi served in almost every Polish home on Christmas Eve, but they also appear on many tables throughout the year. My mother used to say that in her family home, they were served at least once a week. This is my daughter Łucja’s favorite Polish dish.





===== 🇬🇧 Ingredients =====

**Pierogi Dough**

  * about 480 g of all-purpose flour
  * 1 cup of hot water
  * 2 tablespoons of butter
  * 1 teaspoon of salt

**Cabbage and Mushroom Filling**

  * 500 g sauerkraut
  * 40 g dried mushrooms
  * 1 large onion
  * 5 tablespoons of oil
  * 1 level teaspoon of pepper
  * 1 level teaspoon of sugar
  * 3 bay leaves
  * 4 allspice berries






===== 🇬🇧 Preparation =====

It’s best to start preparations the day before.

Place 40 g of dried mushrooms (preferably porcini or/and boletes) in a bowl of cold water and leave them for 10 hours. Remove the mushrooms and chop them very finely. Next, peel and finely chop the onion. Heat some oil in a pan. Add the chopped onion and fry it for about 15 minutes. Then add the chopped mushrooms and fry for a few more minutes, stirring continuously.

Rinse the sauerkraut in cold water and squeeze it well. Chop the squeezed sauerkraut with a knife and place it in a large pot. Add the onion and mushrooms. Pour in the water used for soaking the mushrooms, then add the pepper, sugar, bay leaves, and allspice berries. Cook everything for about an hour, stirring from time to time.

While the sauerkraut is slowly cooking, you can prepare the dough. In a large bowl, combine about 500 g of flour with hot water. Add the butter and salt. Knead the dough first using a mixer, then by hand. After about 15 minutes of kneading, wrap the dough in plastic wrap and set it aside for 30 minutes.

By this time, the sauerkraut should be about done. Let it cool. After 30 minutes, divide the dough in half and roll each piece out into a thin flat sheet. Use a glass to cut circles from the dough. Place a teaspoon of the cabbage and mushroom filling in the center of each circle, leaving about 1 cm of empty dough around the edges. Fold the circle in half and press the edges together with your fingers to form a half-moon shape. Place the pierogi on linen or cotton towels.

When all the pierogi have been cut out and sealed, fill a large pot with boiling water. Add 2 tablespoons of oil, then drop the pierogi in batches of about 20 and cook them for around 8 minutes. Scoop the pierogi out and place them in a bowl or on a plate, and cook the next batch in the same water. The pierogi should be served hot. You can top them with butter or drizzle them lightly with hot oil and finely chopped fried onion.

If there are any leftovers, put the pierogi in plastic containers, spaced loosely so they don’t stick together, and drizzle each with a bit of oil. Cover and place them in the freezer.
