🗨 **Barbara**: Moja mama robiła piernik, który stał się ciastem etykietką mojej mamy. Jego przepis rozdawała wszystkim znajomym, a potem ja rozdawałam ten przepis wszystkim moim znajomym. W pewnym momencie musiałam go nawet przetłumaczyć na język niemiecki. Pewnego dnia znajoma mojej mamy, pani Czesia wręczyła mi po mszy w kościele małą reklamówkę z prezentem. Był nim kawałek ciasta, piernik upieczony w prodiżu przez jej męża. Był zupełnie inny. Z nutką czekolady i z jabłkami w środku. Był dużo bardziej wilgotny niż piernik mojej mamy. Zawstydził nas swoją doskonałością. Tymczasem pani Czesia rozdawała kawałki swojego piernika znajomym z kościoła i z osiedla. Rozprzestrzeniała ten swój wypiek jak wirus, którym zarażała łasuchów i powalała ich nim na kolana. Wszyscy zaczęli prosić o jej przepis. Pani Czesia wraz z mężem zajęli się ręczną produkcją karteczek z przepisem. Do dziś nie wiem dlaczego ciasto nazywało się „Piernik-serdelek”. Nie wiem w czym przypominał on serdelkową kiełbasę, ale gdy dziś myślę sobie o pani Czesi, widzę ile było w jej postawie miłości i takiej ogromnej chęci bezinteresownego uszczęśliwiania innych.

Wzorując się na pani Czesi, upiekłam kiedyś to ciasto w Grecji i zawieszając reklamówki na płotach rozdałam ciasto kilku sąsiadom. Radość była nie mniejsza niż w Polsce, chociaż z braku jabłek upiekłam je ze świeżymi figami. Wyszło wybornie!

Z figami czy z jabłkami, ciasto to świetnie służy do zarażania miłością.

===== 🇵🇱 Składniki =====

  * 2 szklanki((1 szklanka = 200 ml))  mąki tortowej
  * 1½ szklanki cukru
  * 1 łyżeczka sody
  * szczypta soli
  * 1 paczka (2 łyżeczki) przyprawy do pierników (na przyprawę składają się cynamon, goździ, imbir i gałka muszkatałowa)
  * 2 łyżki kakao
  * rodzynki lub pokrojone daktyle
  * orzechy włoskie
  * 1-2 jabłka
  * 1½ szklanki oliwy (wersja light: 1 szklanka oliwy, ½ szklanki jogurtu)
  * 4 jajka
  * 1 łyżka miodu






===== 🇵🇱 Przygotowanie =====

Najpier wymieszaj ze sobą suche składniki (czyli cukier, mąkę, sodę, sól, przyprawę do pierników i kakao). Następnie dodaj do nich orzechy, rodzynki lub daktyle oraz jabłka pokrojone w kawałki. Ponownie wymieszaj.

W innym pojemniku zmiksuj blenderem ze sobą mokre składniki (czyli oliwę, jajka, miód). Wersja dietetyczna ciasta (oliwa z jogurtem) będzie bardziej sucha niż ta na samej oliwie.

Wlej składniki mokre do suchych i mieszaj wertykalnie szpatułką tak, żeby wprowadzać w masę powietrze. 

Posmarować formę do pieczenia (ok. 27x27 cm) masłem i obsypać bułką tartą lub otrębami. Wlej masę do foremki.

Piec w temperaturze 180ºC (160ºC w piekarniku z termoobiegiem) przez przynajmniej godzinę. Sprawdzić wykałaczką czy ciasto jest gotowe (wykałaczka powinna być sucha).

🗨 **Barbara**: My mum used to bake a gingerbread cake that became her signature bake. She shared the recipe with all her friends, and later, I passed it on to all of mine. At one point, I even had to translate it into German.

Then, one day, something happened that disrupted this order of things. Mrs Czesia, who was a friend of my mum’s, handed me a small carrier bag with a present after Mass in church. Inside was a piece of cake—a gingerbread baked in an old-fashioned electric tin oven by her husband. It was completely different. It had a hint of chocolate and apples inside. It was much moister than my mother’s gingerbread. It humbled us with its perfection. Meanwhile, Mrs Czesia was handing out pieces of her gingerbread to her church friends and neighbours from the estate. She was spreading her creation like a virus, infecting sweet-toothed people and bringing them to their knees with it.

After the first wave of cake-induced cravings, a second wave followed. The newly addicted began begging for the recipe. Mrs Czesia and her husband started manually producing little slips of paper with the recipe written on them and handed them out to anyone who wanted one. To this day, I have no idea why the cake was called “Piernik-serdelek.” I don’t see how it resembled a sausage. Nevertheless, when I think of Mrs Czesia now, I realise how much love there was in her actions—her huge desire to bring joy to others, completely selflessly.

Inspired by Mrs Czesia, I once baked this cake in Greece. I hung small carrier bags on fences and shared the cake with a few neighbours. The joy was no less than it had been in Poland, even though, due to the lack of apples, I made it with fresh figs instead. It turned out exquisite!

Whether with figs or apples, this cake is perfect for spreading love.

===== 🇬🇧 Ingredients =====

  * 2 cups((1 cup = 200 ml)) cake flour
  * 1½ cups sugar
  * 1 teaspoon baking soda
  * A pinch of salt
  * 1 sachet (2 teaspoons) gingerbread spice mix (a blend of cinnamon, cloves, ginger, and nutmeg)
  * 2 tablespoons cocoa powder
  * Raisins or chopped dates
  * Walnuts
  * 1–2 apples
  * 1½ cups olive oil (light version: 1 cup olive oil + ½ cup yogurt)
  * 4 eggs
  * 1 tablespoon honey





===== 🇬🇧 Preparation =====

Combine all the dry ingredients (sugar, flour, baking soda, salt, gingerbread spice mix, and cocoa). Finally, add walnuts, raisins or dates, and apples cut into pieces. Mix again.

Use a blender to combine the wet ingredients (olive oil, eggs, honey). The lighter version of this cake (olive oil with yogurt) will be drier than the version made with just olive oil.

Pour the wet mixture into the dry ingredients and stir vertically with a spatula, introducing air into the batter.

Grease a baking dish (about 27×27 cm) with butter and sprinkle with bread crumbs or bran. Pour the batter into the dish.

Bake at 180°C (160°C in a fan-assisted oven) for at least one hour. Use a toothpick to check if the cake is done (it should come out clean).
