🗨 **Wojciech**: Przepis stary i niezbyt, wbrew pozorom, czasochłonny. Za to rezultat zadowoli najbardziej wymagającego cukiernika. Skórka zachowuje piękny kolor, jest aromatyczna, elastyczna i tak nasączona syropem, że prawie przezroczysta. Rany, chyba nie mogę przestać chwalić przydatności tego dodatku!! Gotowa skórka wprost doskonale się przechowuje, i choć jej przygotowanie zajmuje kilka dni, to codziennie zajmuje mi to tylko parę minut bardzo prostych czynności, a starcza na wiele wiele porcji.

  * Skórki zdjęte razem z albedo (czyli białą częścią) z 6-8 sztuk pomarańczy,
  * 1,20 kg cukru, 
  * 1 litr woda do syropu  






===== 🇵🇱 Przygotowanie =====

  * czas przygotowania: po kilka minut przez 9 dni 
  * trudność: bardzo łatwe 
  * liczba porcji: dużo

Skórki zalewam w naczyniu zimną wodą, którą zmieniam dwa razy dziennie przez 5 dni, aby pozbyć się goryczki i chemicznych dodatków konserwujących owoce. 

Ostatniego dnia zagotowuję je w świeżej wodzie, odcedzam i zalewam słabym syropem cukrowym, tak aby były przykryte i ponownie zagotowuję. Zostawiam je do następnego dnia. Czynność powtarzam przez kolejne 4 dni, dosypując codziennie do syropu po kilkanaście dkg cukru. W ostatnim dniu, po zagotowaniu, przekładam je do słoików, syrop doprowadzam do wrzenia, zalewam nim skórki i słoik mocno zakręcam. 

Gotowej skórki pomarańczowej używam do dekorowania mazurków i deserów, jako dodatku do keksów, makowców, serników i innych ciast. 

Uwaga: włożenie skórek od razu do mocnego syropu spowoduje, że staną sie twarde i nieelastyczne.

Alternatywnie, zamiast używać skórki jako dodatku, można też ją podać jako smaczny deser. Po zagotowaniu w ostatnim dniu należy ją zostawić do ostygnięcia, wyjąć z syropu, odsączyć, posypać obficie cukrem pudrem, ułożyć na woskowym papierze i delikatnie podsuszyć w letnim piekarniku.

🗨 **Wojciech**: An old recipe that, contrary to appearances, is not very time-consuming. Yet, the result will satisfy even the most demanding pastry chef. The peel retains a beautiful color, remains aromatic and flexible, and is so saturated with syrup that it’s almost translucent. Honestly, I just can’t stop praising how useful this ingredient is! The finished candied peel stores exceptionally well, and while its preparation takes a few days, it only requires a few minutes of very simple steps each day—and it lasts for many, many portions.



===== 🇬🇧 Ingredients =====

  * Peels (with the white part/albedo) from 6–8 oranges
  * 1.20 kg of sugar
  * Water for the syrup (about 1 liter)

===== 🇬🇧 Preparation =====

  * Preparation time: a few minutes each day for 9 days
  * Difficulty: very easy
  * Yield: quite a lot

Place the orange peels in a container filled with cold water. Change the water twice a day for 5 days to remove any bitterness and chemical preservatives from the fruit.

On the final day, boil them in fresh water, then drain and cover with a light sugar syrup so that the peels are fully submerged. Bring to a boil, then let them sit until the next day. Repeat this process for 4 more days, each day adding a few more ounces (tens of grams) of sugar to the syrup. On the last day, after bringing everything to a boil, transfer the peels to jars, bring the syrup to a boil, pour it over the peels, and seal the jars tightly.

I use these peels to decorate mazurek pastries and desserts, or as an addition to fruitcakes, poppy seed cakes, cheesecakes, and other baked goods.

Note: Placing the peels immediately into a strong syrup can make them hard and stiff.

Alternatively, instead of using the peel as an ingredient, it can also be served as a delicious dessert. After the final boiling on the last day, let it cool, remove it from the syrup, drain well, generously coat it with powdered sugar, place it on wax paper, and gently dry it in a warm oven.
